Happy with the final product. Superior moisture retention in the breast meat to a traditional roast. Could see how anything bigger than about 15 lbs would be difficult though.

Yeah, that’s a fine looking bird.

Main downside to the spatchcock is no in the bird stuffing. Yours looks great there. Would be an issue with my side of family, but we were hosting my wife’s side. It’s basically only me and one sister in law that likes it in the bird anyway.

It's either stuffing or divorce, so...this was my way of trying something different without violating the stuffing rule.
