Having worked at a hatchery when I got out of the service, I'll comment on the "pink meat" question.
Wild fish eat a diet that does turn their flesh redish in color. 99.999999% of hatchery fish have plain white flesh. When you'd go to the store and see the rainbows laying on ice, they had red flesh. They weren't wild. About 10-14 days prior to going to market, we'd feed the fish pellets with dye in them. Start out with strong dose and then back down the levels as you got closer to the shipping date. Was the dye safe? I have no idea. I don't eat fish anyhow.
Getting back to the lighting trout thing....30 years of fly fishing and I've never caught one.
