My camp we are all chefs so we always have great food the morning meals is always me hung over making a omlette of swiss cheese and lumb crab meat. with filet steaks on the side. The night guys make awesome sausage and garlic pasta. And every known awesome meat on the grill. The new guy owns a bar so we now have three beers on tab and unlimited JD. When the girlfriends come up we hit the feezer for some ny strip steak and homemade wine, the always get luck drink. 3 kids have been concived at the cabin I think... For the kids we do mac and cheese with chicken nuggets followed with popcorn on the fire and smores.

Jim is the cook at our camp...he is a chef also...I am not a chef but I cook when Jim is not there...when Jim comes to camp he brings Walleye, frogs legs and other interesting goodies. We like Jim.
 
My friend and I split duty usually. If my dad is there, he always cooks.

On my trip to the outer banks last year, we brought my former professional cook friend. He made some of the best grub I've ever eaten. It's just a shame that I only have foggy memories of it.
 
The group that I float the Smith with is full of very good cooks. That is great for me because otherwise I would be eating hot dogs and cheese burgers for 5 days. To earn my keep I get most of the firewood and do the dishes. Pork loin one night, filets the next, prime rib and the lasagna were almost too good to eat in the wilderness. I did manage to make some good coffee in the mornings though.
 
At our camp 3 or 4 guys cook depending on what's for dinner. I do some of the morning stuff. But I've made pork tenderloins, cajun black bean soup with ham and sausage and some other very well received dishes. The PBJ sandwiches have been great for lunch though I once got laughed at for making them.

I’ve made everything under the sun at camp over the fire. I built a bbq pit at my camp a couple of years ago. Just a cinder block affair. Went the the scarp yard and found some heavy grating and welded 4 handles on it. . The pit itself is 4 bricks high – 3 bricks wide- 5 bricks long. It will hold about 60 lbs of charcoal. I dug a pit into the ground and filled it with gravel and sand and then built the block walls of the pit.

In the morning I like to start a big hard wood fire in it to get thing going later in the day.

Here are my 2 favorites.

1 Large Chicken split in half

Marinade- Throw your chicken in a bag of this overnight
2 pureed mangos- kiwis work if you can find good mangos
2 Tbsp of Smoked Paprika
1 head crushed garlic
1 Tbsp Cumin
1 Tbsp – Brown Sugar
1 Tbsp – Sea Salt
1 Tbsp Ground Pepper
½ tsp of Chipotle Powder
¼ cup oil
¼ cup apple cider vinegar
1 case of good beer – to control flare ups and drink

Now cook this slow and low for about 2.5 hours. Place chicken skin side up on the rack. Don’t mess with it just let it sit.

Yogurt Marinated Grilled Leg of Lamb

Marinade Lamb over night in this.
1 butterflied leg of lamb
2 cups greek yogurt
1/3 cup Lemon Juice
1/3 cup Lime Juice
1/2 cup fresh whole Rosemary
4 to 6 cloves Crushed Garlic
2 TSP Sea Salt
1 TSP Ground Pepper

Grill on med fire for 15 or 20 min a side and you are good to go.
 
Bruno, nice chicken recipe.I will give the marinade a shot and do it Beer Can Style.More to drink lol. My trout fishing buddies and I share the kitchen duties and we all are pretty good cooks steaks, grouper on the grill,slow simmered pork chops,shrimp pasta, blue berry pancakes and omelets for breakfast.We never have leftovers.A small keg in the fridge for the pre dinner lubrication. I need a fishing trip!
 
i dont belong to a camp. wish i did. but when i go fishing and im in the red rock area.

my lunch / dinner includes

a roast beef hoogie from the red rock general store
bag of middleworth chips
and a diet coke

thats a meal for one for the road
 
Well, I cook sometimes, and others do as well. There never seems to be enough time in camp to really get into it. So even the good meals always have that speed factor in mind, we don't want to spend much time in camp when there's fishin or huntin to be done.

For the permanent camp, we have a kitchen. My wife has sent a shephards pie along with me before, with venison as the meat. That always goes over well, just throw it in the oven for a while. Another is to cook hot or sweet sausage the night before, throw it in the crock pot with some sauce, onions, and peppers. In the morning you just flip it on before leaving, and you have a good hot meal ready to eat when you get back. Just remember to flip it on, we've forgotten several times.

As for me, I do one big recipe, and it works on a grill or over a fire but is best over the fire. Beef and pork roasts, cut up into small pieces skewer style. I marinate it all in one of those big pickle jar thingies so that it doesn't leak through the cooler. I don't remember the exact recipe off the top of my head, but it involves soy sauce, olive oil, brown sugar, crushed red pepper, and tons of diced onion and garlic. Really good stuff with a kick at the end. If anyones interested I'll get you the recipe. With the wood fire, you just use the hot dog stick as your skewer. Take meat out of jar, put on stick, cook for a few minutes, and thats all there is. Of course there's lots of prep before the trip, but thats before the trip....

Mountain pies and Kielbasa are also great fire food, polish kielbasa on a fire beats a hotdog anytime.

I hit that store often and you're right! Forget the diet Coke though. :)

Well, I don't have a camp. But we do camp....and some goodies include; Chicken/rice/ gravy and vege foil packs. YUMMY.

Just take two layers of heavy duty foil and lay a bed of rice (uncooked) then some forzen mixed veges, chicken gravy over the rice, Then a boneless chicken breast. Season the chicken breast with seasonallor your preference. Seal it up and throw them onthe grill over the campfire. 1/2 hour later you have a steamy, yummy meal.

Then there are the apples. Core an apple,pit a teaspoon of sugar and some cinnamon inthe core and wrap it in foil. Throw them on at the same time. Makes a nice desert.

These are girl scout ideas that we use and like.

Yeah, I do the good stuff when the family is there but we have way too many "meat 'n taters" kind of guys during hunting and fishing. Beef-a-roni is about as exotic as they get unless Jimmy the actually chef makes it. Then its amazing what they'll try.
 
Breakfast is usually king. Bacon,eggs,pancakes along with pots of coffee. Ummm. Bacon could be it's own food group.

Sandwichs for lunch since usually hunting/fishing.

Most times- bring already prepped meals from home- maybe a homemade lasagna. Or head out to the bar for a couple beers and a hot meal. Usually wiped out from fishing all day and would just rather relax than have to cook and clean. Sometimes just don't want to buy all the ingredients. Mix it all together with beer.
 
mmmmm breakfast...sausage gravy and biscuits...corned beef has with eggs...or the regular bacon and eggs...if we get up late those turn into shmuffins for the ride.

when I go to camp I always buy Lebanon bologna for sandwiches...Kunzler's and not the sweet stuff. Freakin' Pittsburghers and their Jumbo...sheesh!
 
Breakfast gets the day going.Three egg omelet with sausage or bacon, cheese ,sliced tomatoes and rye toast. Orange juice and a pot of coffee. Sandwiches and cold drinks for a stream side lunch.Dinner chefs choice with lots of cold beers.I'm ready!
