well, in mid august ill be going on vacation to the outerbanks in NC. I've been told that a shrimp pattern might work in the surf for blues and pompano, but need a pattern to tie. Any help is appreciated!
 
Ultra shrimp by popivics, EP shrimp, Borski shrimp have all worked good.
 
If you fish the surf for Pompano the best thing to use is a Mole Crab or sand flea imitation. My favorite is just tan or root beer estaz on a size 4 hook with some brass dumbell eyes for weight and some tan calf tail . I'll try and post a picture of one. I fish it in the trough close to shore. It is dynamite for Pomps.
 
Ok I've always used live bait surf fishing in NC and caught pompano on live shrimp so kinda thought they would work...I'll try tying the sand fleas up

Looks like some white Estaz, foam, bucktail/calftail, and some dumbbell eyes and you should be set!

"OBX Clousers" work well also: #2 or 2/0 black over orange with copper flash or black over red with copper flash. Plucked a small flounder out of the surf last year with one of those!
 
Here's my generic salt shrimp pattern and will cover the bases for much of what you'll likely encounter. The key is a mono loop weed guard and dumbell weights to make the fly ride hook upward.
