I think hook setting also comes with experience. I think novice fly fisherman get so excited at a take that they lose there cool. This is where the knee jerk hook set comes from. I try to remain as calm as I can, almost as the fish coming up for my fly is a matter of fact. When I was learning I pulled drys out of trout mouths all the time, now I rarely miss a take. Always let the fish go down with the fly, then a smooth hook set. I set harder than just a lift, but not too hard. Just comes with experience like anything worth pursuing. Best tip though, is keep your cool.
